Grits | Depending on from which side you look, Grits seem to be either the scourge or the Manna of the Forestry Forum. Grits are a course ground meal derived from grinding dried field corn. They are a staple of the Southern States and used as a side dish. Commonly used as a breakfast food, they are also used as sides for other main courses, like fried fish. Hominy Grits are the result of grinding Lye Hominy, a product created when White field corn is soaked in lye water until the hulls come off and the germ falls out(nixtamalization). Hominy actually increases the availability of nutrients, specifically niacin, from the corn. |

Additional or regional comments : Grits are a long running joke on the Forestry Forum where Southern Sawyers tout their wonder and Northerners question their identification as a food product. Occasionally there is a convert, but usually the inventory is left in the South, to be consumed by the appreciative Southern Sawyers. |
