Lamb Curry - from scratch.

Got a new cookbook, $5 from the bargain book stand at Lil's work.  ;)

Trying out some recipes. Lamb chops with cardamon. Not a hot curry, just a nice spice flavour.




With yogurt, tomato and some water added.




Verdict, there were no leftovers, so I'm counting the book as money well spent.  ;D

I like curry, not so much the lamb, and don't eat rice any more but it looks good. Interesting to use yogurt. Share the recipe.
'98 LT40HDD/Lombardini, Case 580L, Cat D4C, JD 3032 tractor, JD 5410 tractor, Husky 346, 372 and 562XP's. Stihl MS180 and MS361, 1998 and 2006 3/4 Ton 5.9 Cummins 4x4's, 1989 Dodge D100 w/ 318, and a 1966 Chevy C60 w/ dump bed.

Recipe... It's called ellaichi gohst

Step one.
100ml of oil + 2 tsp of ground Cardamon and 2 tsp ground black pepper, mixed into a paste with some water.

Fry that in the oil for 2 minutes.

Add the meat + 1 tsp Tuneric +1 tsp Chilli + 2 tsp ground coriander and fry over a low heat for 10 mins (needs stirring to stop the spices sticking)

Add 100 ml yogurt + 2 or 3 chopped tomatoes + some salt. Fry and stir for another 5 mins.

Then add about a cup of water and simmer until the meat is tender. About 20 mins for lamb. Just enough time to cook the brown rice.

Really simple recipe. I would want to embellish it with a little onion and maybe some carrot and or cauliflower or even broccoli and have it over shredded squash (possibly cougette to you?) instead of rice.

Yeah, I usually have some more vege in dishes like this, but cooking them from scratch rather than a jar of Pataks sauce, I'm going with the recipe. Play around later once I'm happy with the sauces. Other recipes have more vege, a lot start with fried onions as a base, and there are various all vege ones as well.

But what you suggest would work, and taste fine if you are watching the carbs.

Looks fantastic.  Just wish lamb was more available and more reasonably priced here.   The only thing better than lamb is venison.  The majority of lamb at the market comes from your area.
Thanks for the recipe.  Question on the 1 tsp Chili: What kind of chili as that has different meanings and types in different parts of the world.  Does the recipe clarify that at all.

That looks like something we would really enjoy. Lamb is very expensive here too but enough for one meal wouldn't break the bank.

Hot peppers. Thai chili's are one or cayenne would work. There are other less hot peppers that would do also. I preffer hotter peppers like habaneros myself.

Yeah. Pick a chilli that suits your taste. You soon get a taste for your local varieties, how much to add and what you prefer.
