We had lots of sockeye salmon in my growing up years in BC and I've had smoked, canned, and grilled. Baked too. You have the best right there! Good score.

Watched a show from Alaska this morning, the native lady showed the fellow how to fillet, hang and smoke the old way for preservation, It almost looked like a cold smoke much like they do hams,, they would brine them then smoke em' for 12 hours, in any case, you guys have quite the bounty for sure.  Looks good,
only have a few chain saws I'm not suppose to use, but will at times, one dog Dolly, pretty good dog, just not sure what for yet,  working on getting the gardening back in order, and kinda thinking on maybe a small bbq bizz,  thinking about it,

I have some in the fridge, properly done it's better than candy. I really like it smoked the native way. Some people use too much brine and make it inedible to my taste.

This is just brined and smoked. Not sweetened up, but yea, still like candy. Smokey fish candy.
