Replacing historic oak roof sheathing

There are a couple of restoration projects getting ready to start here. Both have metal roofs that are going to be replaced. One will get all new sheathing the other only replacing damaged boards. Both have oak skip sheathing which is pretty typical here. Problem is manufacturers caution not to put metal over oak nowadays because of the acid in oak. I'm leaning towards poplar. What is normally done in this situation?

A slip sheet over the sheathing.  Something like tar paper.  Maybe even red rosin paper.
