I mentioned this dish in another post.
Linda got this recipe 30 years ago at a bed and breakfast in Cooperstown NY.
Just finished a generous portion.
Yum Yum
10 eggs       
1 tsp baking powder
1/2 tsp salt1/2 cup flour
2 cups cottage cheese
4 cups shredded jack or sharp cheddar cheese (either is delicious)
1/2 cup melted and cooled butter
2  cans (4 oz each) green chilis.
Preheat oven to 350, beat eggs till light and lemon colored, add flour, baking powder, salt, cottage cheese, other cheese,and butter. Blend until smooth, stir in chilis. Pour into well buttered 9x13 baking dish. Bake 35 mins or until top is browned and center is firm.
serve and top with salsa of your choosing.

Us guys in our small church always cook a breakfast on Easter morning for the folks in church and we do eggs much the same way but without the chili's, that sounds really good, we may have to try a batch next year (of coarse we'll have to do some experimenting first  ;)).  Thanks for sharing that.
