I love sourdough bread, English muffins etc.  After doing a little research, it appears that it can be a lot of work trying to start and maintain a kit. Anybody have any suggestions or feedback? Thanks!

taking care of Sourdough Starter is easy, if you use it.
Sourdough Pancakes
Mix:
2 C Flour
1 Tsp Baking Powder
1 Tsp baking Soda
1/2 Tsp Nutmeg
1/2 Tsp Salt

Add:
2 C Starter
1 can Evap Milk
2 Eggs
2 Tblsp Butter
1 Tsp Vanilla

mix till ready. pour 1/3 Cup at a time onto 350 Degree Griddle.

Sourdough Starter: From memory :-\
in a glass container large enough to hold 4 to 6 cups and large enough get a measuring cup into.
do not use plastic container
2 C flour
add Baking Yeast. yes you could get wild yeast from the air, but most likely you will get mold or something worst.
add water till a thick paste, about as thick as tooth paste, maybe a little more water.
place jar in a warm place to allow the yeast to grow and do their work.
when the starter has stopped working it is ready to use.
pour any liquid down the drain, or onto your mulch pile.

I tried a starter once and made pretzels with it successfully ( they tasted like regular soft pretzels) but the bread was more or less a failure. I would say my problem with the bread was I didn't drain the liquid off of the top.
