Ask no secrets, and you'll hear no lies ;D
only have a few chain saws I'm not suppose to use, but will at times, one dog Dolly, pretty good dog, just not sure what for yet,  working on getting the gardening back in order, and kinda thinking on maybe a small bbq bizz,  thinking about it,

Having the son in law cook some ribs up for us, he brines in some kinda apple brine, then racks them up low and slow, bone pulling good,

We usually cook up around 4-6 racks of ribs like Raider Bill's pic (post #7) through the course of the summer and maybe 2 during the Winter!

Never had a complaint yet!  8)

If there is any left over, they do freeze well. I had a nice meal of bbq ribs just before I left to come back to work that had been in the freezer. Had to get my pork fix in before I left.

Cooked a few slabs yesterday afternoon along with some beans and potatoes.  We ate some leftovers tonight. I agree with Raider Bill about using a paper towel or a napkin to remove the membrane-makes the job much easier.

I start with some good meaty baby backs, remove the membrane, put a coating of Janes crazy salt, and then a coating of Tony Cachere's creole seasoning. Indirect cook them with medium heat and 2 good size chunks of hickory for about 2 hours.

I like Janes Crazy salt too. They also have a crazy pepper but I have problems finding it sometimes.

It seems that the only way to get the 9.5 oz size anymore is to buy it at Amazon. They have the pepper also. :)
