Yup, it is that time of year so Pat and I stuffed our bellies this afternoon.  Crawfish, corn, potatoes, mushrooms, & garlic.


 
Well, my belly anyway.  She ate one tray and I ate two trays.   :o

And then it was brownies, pies, cakes, puddings, and whatever else is good for you.   food6

Looks great. My wife flies to Hattiesburg Monday for a week. Maybe she and her brother will belly up to a tray or two.

There are big and little ones.  The average crawfish is more like 3" long and the tail about 1", and no, there is not much to eat on one.  You have to peel a lot of crawfish to get a belly full.  But Good!!

Sorry MM I had to throw those in there. That's my hand, it's 6" from wrist to the tip of my middle finger. But those are Ukrainian Crayfish. My wife is Ukrainian, and went to LSU on a student visa. On one of our trips down the west side of the Mississippi thru Plaquemine Parrish there were signs "Large Crayfish fresh boiled", she wanted some. I stopped and bought some, they looked large to me. These are not the largest but close. I've thought if you could farm these like shrimp thay would sell.

Pretty good Cajun. I love that accent. I had 2 customers / car dealers, One in Franklin La., the other in Homa La. I spent 2 weeks each installing computers, plus my wife went to LSU for her masters, for 2 years. So I went back and forth every other weekend. Not as much Cajun accent in the air in Baton Rouge as on the coast, but I miss it.

We visited Franklin La. very often during the 60's & 70's and there is some mighty fine eating there I will guarantee.

We went down into the salt mine at Avery Island that flooded when the oil rig drilled into a tunnel.

If I am correct Avery island is where they grow the hot peppers for tabasco sauce that will burn the hide off most peoples tongue .Those peppers will get you coming and going in a manner of speaking . :o

I did the network in Columbia Chevrolet - Toyota in Franklin. (never understood "Columbia") There is a casino out in the bayou on a Indian Reservation. It had some of the best Shrimp, Frog Legs and Crawfish I have ever eaten. What's up with the spell check, the Yankee that wrote eats crayfish. We eat Crawfish down here. :D :D :D

Actually the peppers are now grown in many locations around the US and the world.  This is to prevent a disaster, natural or otherwise, to wipe out their pepper crops.  All of the picked peppers are transported to "Avery Island" where Tabasco Sauce is actually made.  I forget the actual numbers, but the amount of sauce that is bottled is mind staggering.  LINK

Not Hot Peppers but I came across this Green Pepper field harvest while looking at some acreage for sale about a month ago in Delray Beach.  They do the whole process ready for shipment from the fields.

A little itty bitty bottle of tabasco sauce sauce lasts me for a long time.

Although It is very rarely a get a chance to make bay crabs or in fact crawdaddies I use "Old Bay " seafood seasoning .We have cray fish but the season is limited as well as the amount of catch at one time .They aren't as large or plentifull as those in the southern swamp lands .Tastey none the less .
