I was out doing ornamentals today. From now until bud break. Dont remove more than 25% is a good rule i like to use.

The rule of thumb I was taught was to trim up to about 1/2 the branches; if the tree dies, you pruned too much.

Caring for lilac's where you likely want the best form and shape for the blossoms is some different from apple trees.

For lilac's, here is a link that may help.

For apple trees, it will depend on the history of the tree... if left to grow for years without pruning there will be one method, if pruning annually or bi-annually there will be another method.

Here is one link for apples. There are others if google "apple tree pruning" for more info.

What I was taught to prune apple trees, to cut everything going straight up or straight down.  :) What that mostly meant was to cut out all the suckers that shot up the past growing season. No treatment on wounds, but best time was near the beginning of the growing season as then the cambium didn't dry out so much right at the cut stub. But at least during the winter as mentioned, before buds break in the spring.
To keep an apple tree within reach for picking, take out the tall stems in the top, and train horizontal stem growth. Ends up similar to a bonsai tree.

Ditto and thanks for the lilac trimming link. I'm an idiot... All we ever did was cut Em back now and then like they were weeds. Um... Red face... I guess there's more to learn!
