I cut some cookies of walnut, cherry, red oak for a wall in the basement. I was told to cut in Jan. and the bark will stay on. I cut a slab of oak in Jan. 2012 for my bench top for the reloading room. I kept a live edge for the out side. I did take off the bark but left the outer "white" wood. The cookies were cut with a chain saw and left rough, no finish, the bench top three coats of poly, 5-sides.
