Espalier "hedge".

I'm doing some long term garden planning, and I think I'd like to put in a fruit tree espalier hedge as one border. Years ago I read up on making a single espaliered tree, but not a series of them. My main question is what would happen if I had several different varieties of apple in close proximity regarding pollination? I like the idea of having a densely producing "orchard" with that doesn't require a ladder to harvest.
