We have an Airstream RV Rally in Lockhart, Texas and we are scheduled to visit 4 of the most famous BBQ joints in Texas. I may need an extra tummy and some "doggy-bags". Here is a link to show the 4 spots. I will report next week.

Never tried Chislom trail, but I can tell you, you won't be disapointed with the other three. Blacks is famous for ribs, Kraus for sausage and Smitties for all of it. Makes my mouth water. Central Texas has some fantastic BBQ. If you get to Elgin try Southside Market for sausage. Get the 1882 recipe. It's their original "hot guts" recipe and has a little bit of a bite to it. The recipe is super secret. I've been trying to duplicate it for years with no success. larry Mueler's in Taylor is also a great place for Q. Just about anything on the menu is sure to please and you will get a bite of brisket for a sample when you order.

As I figured when the group started on this effort, we quit after 2 BBQ places; we all were just too full. The first place we went was Kreuz's. They have no BBQ sauce and no utensil, long line.  We all ordered brisket, ribs and sausage. I scored this way, 10 being the best and 1 being the worst:
Brisket-7(Good but not great)
Pork Rib-10(the very best rib I ever ate, bar none)
Sausage-6(again, good but not great)

Next we went to Black's, again long line and a smaller facility. They have sauce, utensils and side dishes:
Brisket-7(about the same a Kreuz)
Pork Rib-6(cold, chewy)
Sausage-9(they have about 5 different flavors, I chose Shiner Bock and it was the best ever)
Beef Rib-10( one of our bunch dove into the monster beef rib and gave us a taste. Way better than the brisket and I would oder that next time)

Another place not on the tour that was close to our campiung location in Fentress, was Frank's Place. I would eat there any time. We had their specialty of Tex-Mex Chicken Casserole one night and their Chicken Fried Pork Steak another night. Both dishes were outstanding; the casserole was as good as anything we find in Santa Fe, NM and that's saying something. The pork steak was nothing like I have ever had before, very tender and the batter was just right, not to mention the gravy.

All in all, we are looking forward to finishing our BBQ tour with Smitty's and Chisolm Trail still on our bucket list.

Sorry to hear that Kraus' dissapointed you on the sausage. I always found them to be very good, but I haven't been there in 8 years. Same with Blacks and the pork ribs. That used to be their claim to fame.

We had a real problem with Kreuz.  Since I am the customer, it should be my option whether I want only a dry rub, wet, or a combination of both.  The staff's attitude of "it's our way or no way" was unacceptable to me.  The food was OK but we certainly have had better.  Next time I will choose the highway.

We asked for directions at the campground and should have taken the hesitation of the campground host as an indication that we should have gone elsewhere.  We should have asked "where is a good place" rather than "where is that place".   :-\

Around here you can't get a good sausage for love or money so I have to make my own to get something I like. Stuffed 130 lbs of them yesterday. Sausaged aout for a while.

I have eaten sausage all over this country, smoke, boiled in beer, etc, but I have never tasted more great sausage than here in Texas. I don't know their secret, but man, those little sausages are dinomite. 8)
