Which is better? Drying the log whole or milling then drying?

Get it sawn as soon as possible, then dry the boards.

Three reason, in a log it will take years to dry, literally. It's almost certain to check (split) in some way as it's drying in log form, and lastly dry wood is MUCH harder to saw than green.
