I made this simple dish tonight with Grilled Steak and Corn on da cob.
It was awesome and I will make it more often. :)

Ingredients:
8 medium white potatoes (rinsed)
8 tablespoons salted butter (or unsalted if you desire)
1/2 a sweet or Vadalia onion (diced)
6 slices Bacon
Salt, Pepper, Garlic or Herb seasoning to taste

Steps:
1.Precook Bacon about 3/4 done.
2.Preheat oven to 475.
Cut potatoes into quarters and put into microwave safe dish.
Top with butter and microwave high for 5 minutes.
Meanwhile chop your onion.
3. Stir potatoes to evenly coat with butter and microwave another 5 minutes on high.
4. Take out of microwave and mix the diced onion into dish, season and then put your bacon on top of the potatoes.
Bake in oven for 20 minutes or until potatoes are tender.  (makes 6 servings....almost. ;D)
