pickled heart

I've got a beef heart thawing out in the fridge right now and I've read here about pickled heart.  Does someone have a good recipie?  Or maybe I should cure it with the corning method?  Any suggestions? 

The tounge is coming out of the freezer next week any suggestions for it?

Try Googleing "pickled heart"  there are a bunch of recipies .  I was thinking of trying it also.

Tongue goes well in studanina  :)  Or throw it in with the pickled heart.
