Here I am at the cabin.  Burlkraft delivered me here on his way through so I could be here for the upcoming deer season this next week.  I'm all by myself for the next few days and no wheels to go anywhere other then my quad. Today its raining hard and its cold and I'm bored. :)

I looked out side and spied this: The little pile of Pumpkins that Corley 5 gave me to feed to the deer when Steve and I stopped there on the way up.

At this point I have a pumpkin cleaned and I am roasting the wedges in the oven to get some cooked pumpkin. I lightly oiled the flesh side and turned upside down on a foil covered pizza pan in a 350 degree oven. I'm still scheming on what I'll do from here as I am pretty limited on available ingredients.  I'll keep ya posted as I progress. :)

It would go well with fresh deer liver and onions and buttermilk biscuits.

I've decided I need some evaporated milk and I don't have any, so, I am evaporating some milk.  This may take some time.  :)

I'll eat heart but no liver for me. I'll eat beef liver though.

Its tough to reduce milk without boiling or scalding but I'm givin it a go.

Side by each, I'll take the venison liver over the beef, any day. Much better taste, and texture. A step above venison liver, has to be elk.  :)

Paul_H, you are making me hungry.  :)

I think you can just take powdered milk and just add about half the required water to make condensed milk. Course you probably do not have any of that handy either, but powdered milk is good to have around in a cabin as you can substitute it for fresh milk in a pinch.

Still doesn't taste the same, but it is better than water over bran flakes.  ::)

Beenthere, anything tastes better than liver.   :)

Its still rainin. :-\

I called Lou and Katherine up to see if they had dinner plans and they didnt, so I'm going to cook supper and when its done I'll wrap the cast iron pan in a towel, put it in the box on my quad, put my rain gear on if still needed and go have fried chicken and rice-black beans and peppers for supper and MAYBE pumpkin sumpthin if it becomes something.

Speaking of which,  I processed the roasted pumpkin and blended it with the following.

2.5 cups pumpkin
1.25 cups Jiffy bake mix
1.5 cups brown sugar
1.5 cups evaporated milk
2 tsp cinnamon
4 tablespoons margarine
1/2 tsp nutmeg
2 tsp vanilla
4 eggs

I've put it in a 350 degree oven for a yet to be determined length of time. :D

It looks rather non-descript in the baking dish.

In the oven for 60 minutes  inserted knife comes out clean. It sure smells good. It looks pretty good. I guess I'll take it along for dinner and  let Lou and Katherine be my test subjects. :D

So, was it eatable?
Or is it now bait. ;D

Jeff

It turned out very, very good! Almost amazingly good.  I've been trying to upload a video clip of Catherine and Lou trying it but have to admit defeat on this connection.  Best I got is this photo.

Does it matter what kind of pumpkins you use? I know they are orange pumpkins  ::)   but I mean when you buy seeds there are hundreds to choose from. I was just wondering if the flavors are all similar. I still have a dozen or so left from Halloween out on the patio. I may just have to try Jeff's recipe.
