That's a grill full of pork butts.  You must be expecting company. 

Oh yes!  A man after my own heart.  It's a return to the time of a man being a man, when animal flesh roasting over an open fire was a sign of wealth and prosperity. 

What a good feeling to get the testosterone moving again.  We've just about lost it  in the last 100 years. :D

Tell me how you are doing this.

long and slow..over hickory smoke till the bone is falling out ,  cooking indirect using a dry rub
this was just a box of butts a (3rd of a load) to finish off filling up the freezer .
We do catering/concessions and are feeding  500  next weekend.

We usally have a few extra plates around 
dry rub is no secret
it is just a pinch of this a little of that  :D + alot 99.9%  "tones cajuan seasoning"
mixed with very heavy hickory smoke 
chopped very fine   
don't even need any sauce for a sandwich

Is that seasoning anything like Tony Chachere's Creole Seasoning? Now that's some good stuff  ;)

I don't know i've not tried it. the  tones is  mild but adds to the bbq flavor

With the Chachere's, if you stump your toe, it'll have a little bite. I'll have to see if I can find some of what you use and try it out.

500 people is a whack of peoples ! You must be good at what you do there 8)  I use pork butt for grinding in sausage recipes but only like 10 pounds ,very small scale but fun ! 

After a long winter here and reading this I think I am going to get some hot dogs and hamburger and fire up the bbq tomorrow . That first bbq of the year sure tastes good
