Well we stuffed and smoked alittle over 400 lb of deer sausage about 2 weeks ago, Well I got tired of waiting for the smokies to hang so...



I bought some home and put them in the dehydrator, here they are just at the point where you get a good snap when you bite into them.



Above is some more waiting to go in, about another 10 pounds or so.



My darling wife even let me bring in a couple of big links, Maybe they will dry a little quicker. ;D

Well to be honest with ya, I have never hunted a day in my life.
We were talking one day at work and a couple of guys were complaining about how long they had to wait to get into a smoke house... Well I said, I will build you a smoke house if'n you make me an equal partner.



I think I may have overdone "testing" the smokies as they cooked. But they smell so good...Sorry!

You don't even hunt game birds ?

My uncle says he cut his teeth on deer meat. Grandfather was a guide out fitter so there was lotsa deer meet. They never make sausage just canned the meat, had fresh steak and roast and canned minced-meat for winter. My friend down in VA hunts throughout the season, smokes some and freezes most. He thinks he's in deer heaven. :) His grandfather's hunting skills rubbed off on'm up here, and it took ;)    I only used to hunt grouse, never cared for deer meat much. I'm a poultry and fish guy.

Ya Kevin, howsabout that recipe, I'm just getting into smoking. I have made alot of jerky but them sausage sticks look great.

Howabout putting it in the recipe section and then letting us know when it is in there. DETAILS MAN I NEED DETAILS!

I dont really know the recipe, we buy the cure from the local meat market, takes about a 5lb bag to do 100lb.

The mix is 50% deer and 50% pork. we chunk up all the meat and put 50lb of each on the table, add the cure and garlic and mix by hand, we then grind twice, once course and then to the size of hambuger. then stuff.

I dont think the smokies are going to last very long, I was talking to one of the guys last nite and it sounds like are going to make some more in a couple of months...

If I have any left  ;D I will bring some to the FF pig roast

What kind of casings and do you just cut the links to size leving the ends open?? How long do you smoke them??

Ron,
The casing are one pc. Holding about 10lb. We have a rack make up. Picture a rectangle, 12" x 24" and 36" long. As the casing's get packed, we spin the rack, winding the smokies up in continuous pc.

We have 6 of these racks and the meat gets smoked right on the rack. I think they smoked them for 24 hrs.

We are heading up north tomorrow, when we get back I will try to find out more about the casings and cure.

It's Kinda funny...we put 4 trays on the dehydrator, but by the time we sample them to make sure they are cooking ok, we seem to come out with only 3 trays?
