   Grits *could* co-habit with maple syrup, but would probably be more happy with something like sorghum and biscuits..lw

I won't have anything but pure maple syrup.  We made it when I was kid and "pancake syrups" don't even come close.  To make syrup go further Grandma Whittaker used to cut her's with Karo syrup ::).  Why she did this when we made it and had all we wanted I'll never know but she did.  One winter I was visiting them in Florida and she made pancakes for breakfast.  Now I knew what she did to the syrup as Dad had told me.  I put on just a little, tried it and asked what she'd done to the syrup ;).  It WAS pretty gross :D  She said it was to make it last.  I told her we had several gallons at home.  She got the pure stuff out and that's what I used.  Grandpa used it too.  He didn't say anything during the exchange but he used the real stuff when it hit the table ;D ;D 8) 8) 8)  After that bottle of mix was gone I'm sure she didn't do it anymore ;D :) :) :) :)  We've still got some of our own left but I got some at an auction last fall.  Two quarts of light and two of mid season.  I prefer the darker mid season stuff myself.

Real maple syrup is from Vermont, not Canada.  The Canadian stuff is just a poor substitute.   ;D ;D ;) ;)

ya know y ???...once i was in vermont at some friend's dinner....they where serving meat pie whit maple syrup :o....eh..was it the meat pie the substitute ;D

New Hampshire makes maple syrup, also. I try not to mess up my syrup with other stuff and just sip a little in a cup. ;D

For the last few months, I've been enjoying Canadian maple syrup that isawlogs' family made. It is just slightly more intense than what I'm used to from NH. And the flavor is a little fuller or rounder. But the difference is VERY subtle.

Any way you pour it, maple syrup.... the real stuff from anywhere.... is wonderful 8)

Ok i have an idea ,the last batch of sap i received was at the pig roast eating it ever so slowly however i do not think it will last for 233 more days.So i propose that Ny, Pa,Wis and any other state or country that can submit a sample will be give a fair and accurate rating. However the StumpJumper family from Mi,is now in first place.On to the Grits, any body south of the line that wood like to send a sample so be it, but we wont have any feeders here until early spring, and dont need grits around gittin old.  Mtn Jack official tree sap tester

Black birch syrup is even stonger than yellow birch. I've never tasted it, but I've sampled yellow birch twigs which is quite strong. Even showed kids how to identify it by taste. I believe root beer was once from black or yellow birch, now everything is simulated.  ::)

Some folks put a drop of maple in their coffee to, I never have. But, hey. ;)

Pre-commercial thinning pays off. :)

The flavor of pure maple syrup is what keeps me making it each year. You wouldn't believe the aroma when boiling, just can't get enough of it! Oh, by the way, Pure NYS maple is the best. I am completely sold out until 06 season starts. Can't wait, I'm just ;ike a kid waiting for Christmas when it starts getting close to maple season. The flavor is slightly different form location to location and season to season but my 05 crop was the best I ever made. Be real nice if 06 is the same flavor and a huge production year too.
logging small time for years but just learning how, with a Forest stewardship plan, 2 compact Ford 4x4 tractors, 3point log arch, 8000# class excavator, lifts 2500# and sets logs on mill precisely where needed,  Peterson ATS upgraded to WPF mill, sugar maple/maple syrup a hobby gone amuck.

I don't make much yet but I'm growing. This coming season I will have about 300 taps which is real small for a maple producer. The 05 season was a disaster because we only had 9 days of sap flowing for the entire season and only made .1 gal / tap, the previous 2 seasons I got an average of .38 gal / tap or in other words I should have gotten almost 4 times the total I did. In 05 I only had 160 taps and only made 16 gal when a typical year would have given about 50 gal. These #'s are the syrup made not the sap collected. With the taps I will have in 06 I should hopefully make 110 gal+ if I get my long time average. The problem with the 05 season was that it stayed below freezing way too long so that when I finally did go above freezing we were so late in the year that after 9 days of flow the buds broke. Syrup needs freezing nights and warm days for the sap to flow and as soon as the buds break the season is over for me. Some operations do make it a while longer and sell low grade syrup and what is called buddy syrup which can be used for commercial uses such as adding it to artificial syrup to give it that "maple flavor" and in cooking recepes. I am not yet a big enough producer that I could even sell commercial even if I wanted. I did however have some left from 03 and 04 which I have now sold too. I have so far sold mine at retail and it has worked good. As I get bigger I will need to develope a larger market or I will need to start selling it bulk at a radically lower price. I do have a lot of ways I can sell more at retail, I haven't even advertised it yet but that will change soon.

I always liked maple syrup, but I could take it or leave it. Then I made a delivery to a maple producer while he was boiling and he showed me around.  The aroma in those shacks when these guys are evaporating is indescribable! smiley_bounce It was like a mainline fix to me and now I crave the stuff! Closest thing I can compare it to is coffee, where the product tastes good but the smell is even better.

Asy I tried maple syrup from a forum member this year that was shipped to me in a plain brown box and it was fantastic. By the time I finished my pancakes my head was just a buzzin ! :) I looked like Winnie the Pooh trying to get the last drops to come out of the fancy tin can it came in. I had it all over my beard and eyebrows .  ;D  Maybe I can turn you all on Lutefisk someday :-X

I love the syrup too, but one of my favorite treats at one of the local sugar shackhere is the maple sugar candy. Not sure how exactly they make it, looks like they just keep boiling it down until they are left with a cake of stuff that looks like hard-packed brown sugar. yum ;D
